Nutritional Composition: Rich in free amino acids, small peptides, nucleotides, taurine, and other nutrients. Typically contains 10% free amino acids, 25% small peptides, 1.5% nucleotides, and 2.41% taurine. Umami amino acids such as glutamic acid and glycine total approximately 12%, making it highly appetizing.
Production Process: Leftovers from marine shrimp, shrimp larvae and freshwater shrimp processing are used as raw materials. Inner gland fluid is obtained and treated with animal protein hydrolyzing enzymes. Following hydrolysis, temperature is raised to eliminate enzyme bacteria. The liquid undergoes sedimentation, ultrafiltration, and reverse osmosis membrane separation. Finally, the retentate is mixed with ethanol and sealed.
