Lysolecithin Powder is a product produced by the hydrolysis of phospholipids by phospholipase. It has strong wetting, dispersing and emulsifying properties. Compared with ordinary soybean lecithin, its water-in-oil emulsification performance is stronger, its emulsification stability is better under acidic conditions and in the presence of salt, its adaptability to temperature is wider, its ability to bind to proteins and starch is also improved, and the addition amount is small, about 1/10 of that of ordinary lecithin.
